Get some really good charcoal and wait until it’s white hot
I marinade my steak, see my other recipes
and just lay it on the coals, it won’t burn, your smothering the oxygen, it won’t get covered in ash, if your charcoals good.
Flames will come as the fat melts, but at worst it will get a few crispy charred bits.
Give it a few minutes each side and enjoy the smokey sizzle
when it’s done let it rest as usual
