Without it a party becomes a meeting

You will need

250g of brown rice
2 large onions, 1 red pepper and 3 cloves of garlic all chopped together
I deseeded red chilli
1 teaspoon chili powder
1 teaspoon of ground cumin
2 tablespoons of tomato puree
2 tablespoons of tomato ketchup
A tin of good chopped tomatoes
Enough chicken stock to fill the tomato can (richer the better)

How to make it

Preheat oven to 150C
add a glug of oil to a good sized pan and heat enough to fry the onions, garlic, peppers and chopped chilli until they’ve softened

Throw in the chilli powder, cumin and cook until the mixture starts to stick

Empty in the ketchup, purée, tomatoes and stock and keep stirring

When its simmering test for salt and pepper then add the rice

Stir well and cover the lid of the pan with foil, then it’s lid, you’re trying to keep the liquid in

The trick is to cook it for long enough for the rice to swell and absorb the juices are absorbed, not stirring until it’s ready, I usually have the first look after 20 minutes.
