You will need:

6 large lemons

a bottle of strong vodka

200g of granulated sugar

How it’s done:

Wash the lemons and remove the zest taking care not to remove any of the white pith. Place the zest in a large sterilised mason type jar and cover with half the vodka. Seal and set aside in a dark place for 2 weeks shaking daily.
Two weeks later, put 225ml water and the sugar together in a saucepan over a low heat until the sugar has completely dissolved. Let it cool or the limoncello will go cloudy.
Pass the lemon vodka mix through a filter bag and mix with the remaining vodka and the sugar syrup. Pour the mixture into a clean bottle and leave alone for a month.
